I forgot to add this recipe HERE, so here it is!
Tomato Walnut Sauce
1 cup apple juice (fresh)
1 onion, chopped fine
2 tsp oregano or Spice Hunter Italian Seasoning
1 29 oz can of pureed tomatoes (no salt added)
1 cup walnuts, chopped
1 lb fresh spinach, cleaned and chopped
Saute the onion in apple juice until it is translucent. Add seasoning and tomatoes, and cook for 20 minutes on medium heat. Add walnuts and chopped spinach, and simmer until spinach is wilted (2-3 minutes). Pour over whole grain pasta, rice, or baked potatoes.
